
We preserve the natural sensory characteristics of the grape to create an individual experience of their flavour, scent and colour without elaboration. This way, we produce wines that are easy to drink with originality and nuance on the palate.
Our artisan wines are not excessive in flavor, but round, pleasing to the palate, respecting the natural characteristics of the grape and its terroir (climate and soil).
The grapes are selected manually and harvested during the coolest hours of the day, in order to preserve the aromatic characteristics typical of the vine.
In the cellar they are de-stemmed before proceeding with maceration in the case of red wines, or gently pressed for white and rosé wines. In both cases, fermentation is carried out at a controlled temperature for 15/25 days. During this time, the extraction of the aromatic substances and natural polyphenols occurs, which helps preserve the wine, reducing the use of sulphites.

PRIMITIVO RED PGI SALENTO
Ruby red color with hints of ripe berries, cherry and plum jams. Spicy and toasted notes of vanilla, cocoa and coffee given by the refining of 6 months in steel and 4 in French oak barrels. On the palate it is soft, velvety and persistent with an elegant tannic structure typical of the primitivo. Excellent meditation wine and accompaniment to grilled, roasted and braised meats.
